Bikini Recipe

Serves 10 servings

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Drink (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Combine the listed items inside a pan, bring to a simmer, agitating so the sugar melts. After that, take off the heat allowing it to cool entirely. Transfer into a sterilised bottle, cap it and store in the fridge, it can be stored for around four weeks.

Preparing the Cocktail Base: Combine every spirits and syrup into a big jug, let it rest for an hour, then strain best through muslin, so it's completely strained.

For serving: Pour 85ml of the premix to a cocktail shaker packed with ice, gently stirring gently for one minute to chill. Strain into a cold coupe glass or a similar vessel, decorate with a few cranberries and complete it with a quick spritz of the essential oil above the glass.
